Mother’s Day Morning Pancake Stack

Ingredients

  • 1 cup oats (blended into flour)

  • 1 ripe banana

  • 2 eggs

  • 1 serving PURA Glow+ Collagen

  • ½ tsp vanilla extract

  • ½ tsp baking powder

  • Splash of milk of choice

  • Fresh strawberries, to serve

  • Greek yoghurt and maple syrup, to serve

Method

  1. Add the oats, banana, eggs, collagen, vanilla, baking powder and milk to a blender and blend until smooth.

  2. Heat a non-stick pan over medium heat with a little butter or oil.

  3. Pour small rounds of batter into the pan and cook for 1–2 minutes each side until golden.

  4. Stack your pancakes and top with fresh strawberries, yoghurt and maple syrup.
