- 1 cup oat flour (or plain flour)
- 1 tsp baking powder
- 1 egg
- 180ml milk of choice
- 1 tsp vanilla extract
- 1 tbsp maple syrup or honey
- Pinch of salt
- Coconut oil or butter (for cooking)
Method:
- In a bowl, whisk together the egg, milk, vanilla, and maple syrup.
- Add the collagen and stir until fully dissolved.
- Fold in the flour, baking powder, and salt until smooth.
- Heat a pan over medium heat and lightly grease.
- Pour small amounts of batter into the pan and cook until bubbles form, then flip and cook until golden.
To serve:
Top with yoghurt, berries, or a drizzle of maple syrup.
